of designating the type and thickness of the cuts you desire.

Pricing for a whole, half or quarter is determined by the hanging weight. This may be 65 to 75 percent of
the live animal weight.

When purchasing a quarter, half or whole the cost of processing is included in the $3.25/lb unless a request for cuts
other than those listed is desired. Some special cuts require an additional processing cost.
